GEORGE EDWARDS
of the
Monterey Wine Market in Pacific Grove has paired
wines from selected Southern California wineries with
Chef Biron’s food creations. His extensive experience
with California wines began in 1975 as a bar manager in
Pacific Grove, on to a Monterey wine bar, then retail
wine manager at the Pebble Beach Market and purchasing
manager at The Lodge at Pebble Beach, with the
responsibility for beverage selection, purchase,
logistics, wine program and list development, and staff
training for The Lodge and, eventually, The Inn at
Spanish Bay. George was also in charge of beverage
purchasing and logistics for all Special Events which
during his tenure included the last two Crosby
Tournaments, fifteen AT&T Tournaments, fifteen Concours
d’Elegance, and two US Opens. The desire for more of a
‘wine presence’ led to what is to our knowledge the
first of its kind, a wine market rather than the
traditional wine shop at the Country Club Gate Center in
Pacific Grove. Here the wines have been selected, based
in large part upon years of food and wine pairing, for
their value, food compatibility and versatility and thus
arranged by food groups rather than by varietal.
